Matured initially in American Oak Ex-Bourbon Barrels for over a decade. This release to the GlenAllachie Wine Series, underwent additional maturation for almost two years in ex Sauternes wine barriques meticulously sourced by Master Distiller Billy Walker. Sauternes is a dessert wine originating from the Bordeaux region of South West France, using the ‘noble rot’ (This causes the grapes to become partially raisined, resulting in concentrated and distinctively flavored wines) These Barriques were bottled at their optimum - when the characteristics of the distillery and the wood reached the perfect balance. This whisky was bottled unchilfiltered and all natural colour.
